Pumpkin Seed Pesto Avocado Toast
- 2 cups of fresh basil leaf, no stems
- 4 garlic cloves
- 1/2 cup grated parmesan
- 1/2 cup olive oil
- 1/4 cup CB's Organic Styrian Pumpkin Seeds
- Artisan style bread, toasted
- Half an avocado
- One egg
- Pinch of salt
- Pinch of pepper
Food process the basil, garlic, parmesan, olive oil and pumpkin seeds to create your pesto.
Toast your bread crispy, but not burned. While you're toasting, fry one egg.
Slice the avocado to your liking.
Cover the toast with the pesto, egg and avocado.
Salt, pepper and garnish with basil.
